1. Healthy Mexican Ground Beef Casserole

Ingredients:

1 lb lean ground beef (90% or higher)

1 cup cooked quinoa or brown rice

1 can black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 bell pepper, chopped

1/2 onion, diced

1 can diced tomatoes (no salt added)

1 tsp chili powder

1/2 tsp cumin

1/2 tsp garlic powder

1/2 cup shredded low-fat cheddar cheese

Salt and pepper to taste

Instructions:

Preheat oven to 375°F (190°C).

In a skillet, cook ground beef until browned. Drain excess fat.

Add onions and bell pepper; cook until soft.

Stir in spices, beans, corn, tomatoes, and cooked quinoa.

Pour mixture into a casserole dish, top with cheese.

Bake for 15–20 minutes or until cheese is melted.


2. Low-Carb Ground Beef and Cauliflower Casserole

Ingredients:

1 lb lean ground beef

1 head cauliflower, chopped into florets

1/2 cup chopped onions

1/2 cup plain Greek yogurt

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 tsp paprika

Salt and pepper to taste

Instructions:

Steam cauliflower until tender.

In a skillet, cook beef and onions until beef is browned.

Mix cooked cauliflower with yogurt, cheeses, paprika, salt, and pepper.

Combine beef and cauliflower mix in a baking dish.

Top with a little extra cheese and bake at 375°F for 20 minutes.


3. Mediterranean Ground Beef Casserole

Ingredients:

1 lb lean ground beef

1 zucchini, sliced

1 eggplant, cubed

1/2 onion, chopped

1 can diced tomatoes

2 cloves garlic, minced

1/2 tsp oregano

1/2 tsp basil

1/2 cup crumbled feta cheese

Instructions:

Cook beef with onion and garlic until browned.

Add eggplant and zucchini, cook until tender.

Stir in tomatoes and herbs. Simmer 5 minutes.

Transfer to casserole dish, top with feta.

Bake at 375°F for 15 minutes.
